Chantelle is a multi-award winning chef, owner of Apricity Restaurant in Mayfair and former chef-owner of now-closed and much-loved Covent Garden restaurant Tredwells, which under Chantelle’s leadership was the recipient of a green Michelin star in 2021 for its commitment to sustainability.

Favourite season

I love autumn for the light and the feel of it, and the cosiness. But I love the end of spring and the produce it brings. Asparagus is my favourite spring product, because it’s so fleeting. It’s there and then it’s not, so you have to make the most of it.
