Victor Lugger is the CEO of Sunday, the checkout solution for hospitality that grows your business, including magical pay-at-table product present in some of the most famous restaurants in US, UK and France and now launching in Germany. Victor is also co-founder of Big Mamma Group, with currently 23 trattorias in France, UK, Spain and Germany including La Felicità (biggest Food Market in Europe). Big Mamma was the first restaurant group in Europe to gain the B-Corp status in 2018 and achieved the highest rating for a European hospitality group in 2023.
Julian Metcalfe, OBE, is the founder and owner of itsu – the UK’s leading Asian-inspired food brand. Prior to founding itsu in 1997, Julian had already made a name for himself having founded the UK’s best-known sandwich shop, Pret a Manger, in 1986. In 2008, Julian founded Metcalfe’s Food Company, which, as itsu expanded its Grocery offering, began to sell Asian-inspired food under the itsu brand name, alongside a range of snack items sold as part of the Metcalfe Skinny brand. Julian is one of the leading figures in the UK’s food and drink industry. Through itsu, Julian is leading the charge for healthy and fresh food to be able to compete with the fast-food giants that have for decades dominated the food service market on Britain’s high streets. Driven by a passion to provide nutritious, affordable food at the £7 per meal mark and a ruthless desire to improve efficiencies wherever possible, Julian has proven himself time and again to be one of the UK’s most successful entrepreneurs. itsu currently has 75 restaurants across the UK, with 10 more planned for 2022. They will predominately be located outside of London, where the majority of itsu’s restaurants are currently. itsu has also recently opened its debut location in Europe, in Brussels. Julian lives in London with his wife and seven children.

Myriam Vander Elst joined Epic, a global non-profit start-up which fights to change the lives of disadvantaged youth, in 2015 as Managing Director for Europe. Myriam leverages impact and giving solutions for individuals and corporations to support high-impact social organisations. A graduate from LSE and Sciences Po Paris, Myriam spent 15 years in the private sector as a communication & brand strategist for world-leading agencies such as BMP-DDB and Dentsu.
