Great chefs don’t just cook—they change the way we eat. To close London Climate Action Week, A Taste of Sustainability brings together the UK’s most visionary chefs to explore how food can be both delicious and planet-friendly.
From zero-waste fine dining to wild foraging, fermentation magic to the future of protein, these culinary innovators are reshaping how we think about food. What does a carbon-neutral menu taste like? How do top chefs slash waste without sacrificing creativity? And could fine dining be the secret weapon for a more sustainable food system?
Tom Hunt (Poco) leads a conversation with Ravinder Bhogal (Jikoni) and Chantelle Nicholson (Apricity), sharing their innovative approaches to sustainability—from circular cooking and plant-based creativity to ethical sourcing and zero-waste dining.
And because no great food conversation is complete without a party, we’ll end the night in style. Join us for an after-party where we’ll toast to a future where sustainability and flavour go hand in hand.

Ravinder Bhogal is a chef, journalist, and restaurateur whose cooking is shaped by her Kenyan-Indian heritage and Britain’s immigrant culture. Her restaurant Jikoni earned a Michelin Guide listing and top-60 UK ranking within seven months of opening. She is the author of three award-winning cookbooks, including Comfort and Joy (2023) and Jikoni (2020). Ravinder writes regularly for the FT Weekend, Guardian Feast, and Harper’s Bazaar. She has appeared on BBC, Channel 4, and Indian TV, and was named one of London’s most influential women in food by Code Hospitality in 2019 and 2021.
Chantelle Nicholson is a multi-award winning chef, restaurateur, author and advocate. She is the founder of Apricity restaurant, in London’s Mayfair, which celebrates conscious cooking and joyful dining, which holds a Michelin Green Star.bChantelle is an advocate for seasonality, circularity and regenerative restaurants. Originally from NZ, and a trained lawyer, she is committed to creating a more sustainable and holistic future across her operations and activities, whilst also being an independent board member for ReLondon, an ambassador for Chefs in Schools, a member of City Harvest’s Food Council, and an advocate for many other charitable organisations. As one of the leading female voices in the UK’s hospitality industry, Chantelle is an advocate for seasonality and sustainability, championing veg-forward cooking through both the restaurant and her cookbook, Planted. Her exciting new venture, The Cordia Collective, will open in West Sussex later this year.
Tom Hunt is an award-winning eco-chef, food sustainability consultant, and Guardian columnist dedicated to transforming the way we eat for the better. With over 25 years of experience in sustainable food systems, Tom has worked with leading brands, restaurants, and organizations to design waste out of the food industry and promote regenerative farming. As the founder of the multi-award-winning zero-waste restaurant Poco in Bristol and London, Tom has pioneered practical sustainability solutions that reduce food waste, improve sourcing, and enhance profitability for hospitality businesses. His Root to Fruit food philosophy—eating for pleasure, planet, and health—underpins his consultancy work, which helps food businesses implement climate-friendly practices. Tom also collaborates with initiatives like the NFU’s school farming project to inspire the next generation to cook with seasonal and sustainable ingredients. He regularly works with those in the food industry to develop sustainable products, train teams, and create impactful food campaigns.
